Carrot Coconut Ladoo

Our parents often asked us to eat Carrots as they used to say Carrots are good for your health and  you probably tell your kids the same thing, and when asked why, you explain, "Because they're good for you!" :) 

Carrots can be used in so many dishes i.e. Pulao, Raita, Halwa, Salad... I also like to eat it raw as it is crunchy and sweet!  

My Mom in law had made amazing Carrot Halwa (Gajar Halwa) this afternoon for all of us..These days you get sweet and crunchy carrots in the market which are very tasty...

I tried making Ladoos with carrots and children were in such a hurry to eat the dish that I could not click the step by step pictures :(  Immediately after I clicked a picture of the final product for sharing with all of you the Ladoos got over in minutes...

Ingredients : 

Carrot – 2 large washed cleaned and grated                                                   
Desiccated coconut – 1 cup
Condensed milk – 100 gms. (you may add more in case you want it sweet)
Ghee – 2 tbsp
Cardamom powder – 1/2 tsp
Cashews – 2 tbsp (broken into pieces and fried in ghee)
Desiccated coconut –1/4 cup for rolling the Ladoos

Method :

In a pan heat 2 tbsp ghee at medium heat. Now add grated carrots and saute for 10 minutes till soft . Add desiccated coconut and cook for a few minutes. Now add condensed milk and mix well. Cook for 5 minutes until the condensed milk is all absorbed. Add cardamom powder and mix well. Switch off the gas.  Add cashews fried in ghee to the cooked carrot and mix well.

Allow this mixture to cool. Grease your palms with ghee and take the mixture of cooked carrot and shape them into balls and roll them in desiccated coconut. 


You may make this dessert to celebrate any festival or for your near and dear ones!
