Sweet & Sour - Sweet Potatoes

In India, Sweet Potatoes  are consumed normally when people  fast.   You can try variations of this vegetable try roasting, steaming, baking or grilling them.

Not only are sweet potatoes readily available, inexpensive, and delicious, they have many other benefits for your health. It is a good source of potassium, magnesium, iron, Vitamin D, C & B6. 

I went to the market and picked up few Sweet Potatoes as the next day it was Mahashivratri and  was planning to make some dishes which can be consumed during fast.  My mother used to steam them and peel them and give us when we got back from school.  I liked to add a dash of salt to it and eat it with a cup of hot tea.

My son's friends were at home on Mahashivratri and I served them this Sweet and Sour Potato which was relished by them.  This can also be eaten with Roti as a Sabji. 

So go ahead and buy some sweet potatoes and get to your kitchen to make this delicious dish!

Ingredients :

Sweet Potatoes cut into medium cubes - 2 cup
Jeera - 1 tsp
Red Chilli Powder - 1 tsp
Salt to taste
Ghee - 2 tbsp
Kokum - 4-5
Roasted Groundnut Powder - 1/4th cup
Jaggery - 1 tbsp
Water - 1 or 2 cups
Corriander leaves - 2 tbsp

Method:

Peel the skin and cut the Sweet Potato into medium cubes and wash them.  Add very little water and salt  and pressure cook up to 2 whistle.  In a pan add ghee and temper with Jeera.  Slow the flame and add red chilli powder and the cooked sweet potatoes and mix well.  Add the groundnut powder, jaggery and soaked Kokum and enough salt and cook for 2 to 3 minutes.  Add chopped coriander leaves.  Your sweet & sour sweet potato dish is ready to be relished!
