Coconut Bharwan (Stuffed) Bhindi or Okra
Bhindi, Okra or Lady Finger is my all time favorite
vegetable... I can eat this in any form.. in the Sambar, Crispy Bhindi, Bharwan
Bhindi or Bhindi Raita. It tastes good
with Roti and Rice.
I can just eat the sabji without
any chapati or rice :). This is one
sabji which my daughter loves to eat too.. I have put coconut filling to make
this dish with some lemon juice and green chillies... You will definitely like
this as few of my friends have already tried making this dish and now it's a
favourite dish on their menu!
When you buy the Bhindi, you must
ensure that it is tender and fresh. You
need to thoroughly wash it and dry it in a cloth before you make this dish.
This vegetable is low in calories
and high in vitamin A. It is recommended
to be eaten during pregnancy. The vegetable is good for many health benefits and you must
keep this in your diet to keep fit in a simple way.

Ingredients :
Tender Bhindi - 10 to 15
Crushed green chillies - 2 tsp
Oil 1 tbsp
Turmeric - 1/4th tsp
Fresh grated coconut - 3 tbsp
Salt and sugar to taste
Mustard , Cumin Seeds and
Asafetodia for tempering
Corriander leaves finely cut - 1
tbsp
Lemon Juice to taste
Method :
Wash and dry the Bhindi and dry
with a Kitchen towel. Trim the base of
the vegetable and give a slit without breaking it into two parts. Now coarsely dry grind coconut, salt &
sugar. To this add crushed chilly,
corriander leaves and lemon juice and mix well.
Now stuff this masala with the help of a spoon in each bhindi.
Add 1 tbsp of oil in the pan. Add Mustard , Cumin Seeds and Asafetodia, add
1/4th tsp of haldi. Now put the bhindi
and left over masala in this tempering and cook on high flame for 2 to 3
minutes. Check for the vegetable and
slow the flame and cook till the Bhindi is soft. Serve with Rice / Roti or as a starter.
