Egg Kurma
There
are many different dishes you can make from Egg... Last night I made Egg Kurma for Dinner. This tastes good with Chapati or Rice.
The
aroma of the fresh ground masala is what makes this curry awesome... Ensure
that the masala is not over roasted...
So

Ingredients :
For Masala
Chopped
Onion - 3
Garlic
- 7 cloves
Ginger
- Small piece
Kashmiri
Chilli - 6- 10
Green Chillies - 1 to 2
Cardamom (Elaichi) - 4
Cloves
- 3
Cinnamon
stick - 1
Bay
leaves - 2
Fennel
Seeds (Sauf) - 1 tbsp
Corriander
Seeds - 2 tbsp
Cashew
Nuts - 8
Tomatoes
- 2 medium sized
Turmeric
Powder
Oil
for frying
Salt
1 tsp
Fry
all the ingredients one by one and ensure that it does not get burnt. Cool this and makes a fine paste.

Eggs - 4
Mustard
Seeds
Oil
for tempering
Water
- 1 or 2 glass
Curry
leaves
Chopped
Corriander
Method
:
Boil
the eggs and peel the shell. Give a slit
on one side of the egg and keep aside.
In a pan add oil and put mustard seeds & curry leaves. Add the ground masala and saute for some time. You may add some turmeric powder to this
gravy. Add chilly powder & salt if as
per taste. Add water and allow it to
boil. Slowly put the boiled eggs and
cook for some more time. You may add more water if required. Decorate with
Corriander leaves and serve hot with Roti / Rice.
