Red Pumpkin Raita

Red Pumpkin or Lal Bhopla is a vegetable rich in Fiber.. A cup of cooked, mashed pumpkin contains more than 200 percent of your recommended daily intake of Vitamin A which aids vision, particularly in dim light according to the National Institutes of Health. 

When this vegetable has such great benefits why not consume it regularly?.. Here is a quick Raita that I made with Red Pumpkin.  Do try this recipe and leave your comments!

Ingredients :

Grated Red Pumpkin - 1/2 Kg
Water - 1/4th cup
Thick curd - 1 cup
Jeera Powder - 1 tsp
Green Corriander leaves 1 to 2 tbsp
Crushed chillies - 1 tsp
Salt and Sugar to taste
Mustard, Jeera & Asafetida for tempering
Ghee 2 tsp

Method :


Take grated Pumpkin and add 1/4th cup water and little salt and pressure cook upto 2 to 3 whistles.  Allow this to cool and then mash this.  Add all other ingredients to the cooked and mashed vegetable.  Temper the Mustard, Jeera & Asafetida in 2 tsp of Ghee and add it to this Raita.  Serve chilled with Pulao / Roti.
