Spinach Tomato Sabzi / Palak Tamatar Sabzi
Yesterday, we had Dal Palak with Roti & Rice for dinner..
I had kept some cut Spinach (Palak) in the fridge for later use.
Today, most of the dishes that I cooked was with Tomatoes
as I made Palak Tomato Sabji for Rajesh's lunch box with the cut Spinach I had kept in the
fridge. In the afternoon, I made Tomato
Rice for lunch :). Tomatoes are quite reasonable
in the market and hence made so many dishes with this vegetable!
This is again a very quick and easy recipe and the only
hurdle is washing and cutting the Spinach.
Let get ready to make this dish...
Ingredients :
Spinach (Palak) cut - 3 cups
Green chillies slit into 2 - 3
Finely chopped Garlic - 2 tsp
Finely cut tomato - 1/2 cup
Turmeric - 1/4th tsp
Red Chilli Powder - 1/2 tsp
Salt to taste
Groundnut powder - 2 tbsp
Oil - 1 tbsp
Cumin Seeds, Mustard Seeds & Asafetida for tempering
Method :
Wash and cut the Spinach (Palak). Heat the pan and add oil. Temper with Cumin Seeds, Mustard Seeds & Asafetida. Add green chillies, Garlic and saute for some
time. Then add Turmeric, red Chilli
powder, tomato and salt and cook till the tomato is cooked. Add the Spinach and allow it to cook for some
more time. You need to saute this in
between while cooking. Add the Groundnut
powder and serve hot with Chapati or Bhakri.
