Coconut Raita
We have few coconut trees in our farm in
Kerala.. When we visit Kerala during the
vacation, we enjoy the sweet water from the tender coconuts and also eat the Malai. It is very filling and you also feel energetic
after having the water.
Nearly all parts
of the Coconut can be used, the water, milk, flesh, sugar and oil. Even the
husks and leaves are used as materials in furnishings and decoration.
In South India
most of the dishes are prepared using Coconut. Recently, my mom in law got few coconuts when she returned
back from Kerala. I made
this quick Raita last week and the main ingredient in this dish is Fresh
Coconut.
Ingredients :
Fresh grated
Coconut - 1/2 Cup
Green chilli
crushed - 1
Fresh thick chilled
Curd / Yogurt - 1/2 cup
Salt and Sugar
to taste
Black Grapes -
1/4th Cup
Method :
Add curd, green
chilli, salt and sugar to fresh grated coconut and mix well.
Cut the black grapes into pieces and add it to the Raita. Serve this chilled with Paratha or with Roti
or as a side dish.
