Instant Bread Uttapam

Yesterday being a Sunday, I got up by 7:30 am and had a nice cup of hot tea and read through the newspaper.  I finished with all the cleaning work at home. My  family members were still in their dreams.. sleeping cozily in their beds :)

By 10:00 am all were ready and I had not decided what to make for breakfast... I had wanted to make Bread Uttapam for a long time and hence decided to give it a try!  When I served this dish to my family members, I checked with each one of them what batter I have used to make this dish and the common answer was Oats, Sooji, Rice powder etc.

Uttapam is a popular South Indian dish. It is a thick Dosa, or pancake, with vegetables cooked over Tawa / Non stick pan.  The traditional way of making Uttapam is making the rice and lentil batter, then ferment it which is  a long process.

Bread Uttapam, on the other hand, is instant and very easy to make. Not to mention it tastes divine when served hot and with chutney and sambhar.

Instant cooking of this Uttapam does not take much of your time... It does not require pre-preparation as the regular uttpams.    You will observe that most of the times all these ingredients are readily available att home. Its easy and quick.  You need to just ensure that the batter is not too watery. Try it out... they are Yummy!!

Ingredients :

Fresh bread crumbs - 2 cups
Finely cut Onion - 1/4th cup
Finely cut Chillies - 1 tsp
Finely cut coriander leaves 2 tbsp
Hot Milk - 1/2 cup
Salt to taste
Cornflour - 1 tbsp
Oil to cook the Uttapam

Note : You may add other veggies like grated carrot and finely cut tomato to this mixture.

Method :

Make bread crumbs by churning them in mixer. Add half cup hot milk to this mixture and keep aside for 10 to 15 minutes.  Now add all other ingredients and enough water and make a medium thick batter.  Heat the non stick pan and make thick Uttapams and cook till golden brown on both sides.  Serve hot with Chutney or Sambhar.
