Chapati Soya Bean Sabzi

I and my husband had gone out for dinner recently at Rahul Restaurant in Aundh... the ambience and the food is great there.  We had some snacks at mom-in-laws house that evening and so wanted to just order for some starters and drinks... We spent some quality time with each other and enjoyed the food!

We were driving back home and waited at the signal... I suddenly saw a young gentleman running and stopping near cars with a bundle of books in his hand... he was all sweating and trying to convince people to buy books... My husband told me that he has seen this man several times near Crossword and always he approached him, he has ignored this person.

He was approaching our car and the green signal was on... my husband nodded to him and asked him to come ahead and he parked the vehicle on one side of the road... This gentleman was dumb and was talking to us in sign language... he finally wrote on a piece of paper and it mentioned his name - Vishal, his dream to own a flat of his own and by a Mercedes... We were very moved by reading the piece of paper and had a look at the books that he was showing us and they happened to be Sanjeev Kapoor's  Kitchen secrets a pack of 5 books.  We paid him Rs. 500/- and collected the book from him... He was so overwhelmed and happy he shook hands with both of us and we drove back home.... We wish god fulfills this young gentleman's dream... We wish him good luck on his journey to success!!

Ingredients :

Soyabean nuggets - 100 gms
Ginger - 1 inch
Green Chilly - 1
Warm milk - 1/2 cup
Oil - 2 tbsp
Cumin seeds - 1/2 tsp
Finely chopped Onions  - 3 medium
Chopped Tomatoes - 3 medium
Red Chilli powder - 1/2 tsp
Turmeric powder - 1/4th tsp
Cumin powder - 1 tsp
Coriander powder - 2 tsp
Blanched Green Peas - 1/2 cup.. (I used blanched Sweet Corn)
Salt to taste
Chopped fresh coriander

Method:

Wash the soyabean nuggets with lukewarm water.  Drain the water and sprinkle it with warm milk and set aside.  In the meanwhile, grind the ginger and chilli to a fine paste.

Heat the oil in a pan.  Add the cumin seeds, when the begin to change colour, add the onions and saute for 4 to 5 minutes till golden brown.  Add the ginger and chilli paste and saute for another half minute.

Add the chopped tomatoes and saute for another 4 to 5 minutes.  Add all the masala and saute till the oil separates from the masala.  Add the soya bean nuggets and green peas / sweet corn and mix well.  Add salt and cook for around 10 minutes or until dry.  Garnish with fresh coriander and serve with roti or just enjoy it like a starter :)
