Grilled /Toasted Cheesy Corn and Capsicum Sandwich
I was making the sandwiches and also clicking the pictures so
that I can post them for all of you.
Ria, my daughter wanted Sandwiches for her tiffin that morning. I packed her tiffin and also gave her a piece
of the sandwich to taste. It is very
unusual as she ate the sandwich that morning without any complaints as she
would never want to eat her breakfast in the morning... Before leaving for school, she told me, Amma,now
you must post this on your blog... it is very tasty :)... I just laughed away
to myself as she has seen me cooking, clicking, posting and feeding her with
new dishes... her friend's mother says Ria, you are very lucky, your mother
cooks so many new dishes for you.
She is a bread lover and she loves to eat bread and cheese or
butter either grilled or just plain. So this is a combination which is one of her favorite and she enjoys eating it without
any fuss. I wish my son, Dhiraj was also
at home... he is definitely missing all the home cooked food as he is away from
Pune doing his hotel management at Trivandrum.
He would be home for Christmas Vacation and we all are looking forward
to his visit!
Sandwiches can be made in very less time and serves as an excellent breakfast, snack break or after school snack option. Every bite of this sandwich features an outburst of colour, crunch and flavour. An apt combination of juicy sweet corn and crispy spicy capsicum and a generous filling of cheese, this sandwich has a very balanced flavour. Serve the Grilled /Toasted Cheesy Corn and Capsicum Sandwich fresh off the griller with tomato ketchup.
So, in case you are planning to
relax & enjoy with the family, rather than spending most of the weekend
time in the kitchen, this Sandwich is a good option. You can also make a quick soup to complete
the meal.
Ingredients
:
Boiled sweet corn - 1/2 cup
Butter - 2 tbsp
Finely chopped Capcicum - 1/4th cup
Jalapeño Pepper pickled- 5 small rings (cut into pieces) -
optional
Finely chopped Onions - 2 tbsp
Milk - 1/2 cup (add 1/4th cup more if required)
Salt and Pepper to taste
Oregano & Chilli Flakes- 1/4th tsp
Grated Cheese - 1/4th cup
Bread Slices 8 to 10
Butter - 2 to 3 tbsp
Maida (All purpose flour) - 1 to 2 tbsp
Pinch of sugar
Method :
For making the filling, heat butter in a pan and add the onions
and saute for some time. Add the corn
and Capsicum to the onions and saute for some more time. Now add the Maida and mix well. Now add milk and sugar to this mixture and
with the help of a spoon cook this mixture till it becomes thick. To this add salt and pepper, chilli flakes
and oregano and cheese. Cool this
mixture.
Take 2 bread slices cut them into 4 pieces. Fill the cooled mixture on a slice of bread
and cover with another slice and toast this on a non stick tawa by applying
some butter till both the sides of bread changes colour to golden brown. Serve this hot with tomato sauce.
