Coconut Rava / Sooji Ladoo

celebrations come alive and is not complete without sweets :). I do not have a sweet tooth but my hubby
loves to eat sweets. I have only seen my
mother making Rava Ladoo but never made them earlier. I managed to make them as perfect as they
should be.
I
had to finally hide the container filled with Ladoos from my hubby, Rajesh as
he had finished most of it and kept complimenting me saying.. not sure what you
have added to this recipe but it is so tasty... can you give me one more? I will help you with household chores today :).
With dry coconut, the rich flavour of roasted rava, the
crunch of nuts and dried fruits, and the intense aroma of spices, this dish is
a wonderful delight that nobody can resist!

Ingredients :
Sooji
/ Semolina / Rava - 1 cup
1/4th
cup ghee
1/3rd
cup dry coconut powder
3/4th
cup powdered sugar
1
tablespoon raisin
2
tablespoon cashews crushed
1/4th
tsp Cardamom crushed
1/4th
cup boiling milk
Method:
In
a kadai / pan, add 1 tbsp ghee and heat this on medium low flame. Add cashews
and roast for 2 minutes until light golden brown.. remove and transfer in a
bowl. Add raisins and roast for another
1 minute. Remove them once they are
puffed and transfer to a bowl.
Heat
the remaining ghee over low medium heat and add the rava and roast it until it
changes its colour lightly. This should
take 5 to 7 minutes. Ensure you do not
burn the rava and hence it is important to stir the rava continuously so that rava is roasted evenly.
To
this, add the coconut mixture and stir continuously for about 2 minutes. Add the nuts and raisins, sugar &
cardamom and mix well. Turn of f the
heat. Add about 2 tbsp of boiling milk
to this mixture and mix well. The
mixture should be moist... if required add more milk. Allow the mixture to cool lightly. I made around 12 ladoos, a little smaller than golf ball. Serve this after an hour or two. You can store the ladoos in air tight
containers and consume them within 10 days.
