Eggless Tutti Fruity Rava Cake.... (Iyengar Bakery Style)

Yesterday was a hetic day.. Ria and I went for music class in the morning....After reaching home, made some breakfast for both of us... Rajesh had left for office and hence lunch was quick and short.. I made Potato Capsicum frankies for both of us for lunch.   This is only one way I get Ria to eat different type of vegetables. 



We finished lunch and it was time for me to drop her for drawing class...Ooooops... I was dead tired :(.  While coming back, I passed through Iyengar Bakery and I saw them getting the tray of various cakes on the counter... I was in two minds, should I buy some fresh baked cake for evening snack  for Ria?.. I changed my mind and decided to get back home and surf on the net for the recipe once again for Eggless Tutti Fruity Rava Cake.... (Iyengar Bakery Style) as I had lost the recipe... I  found a link posted by Madhulika Vatsal on one of the food page... This time I noted down the recipe and after I came back from the Meditation class... got all the ingredients ready and finally baked the cake.  My house is having the lovely aroma of this delicious cake :) While you guys note down the recipe I will have a quick bite of the cake!

Ingredients :

Fine Roasted Semolina (Rava) - 1 cup
Maida - 1/2 cup
Powdered Sugar - 1 cup
Butter - 1/2 cup
Fresh Curd (Yoghurt) - 1/2 cup
Milk - 1 cup
Tooti Frooti - 1/2 cup
Baking powder - 1 tsp
Baking Soda - 1 tsp
Salt -1/4 tsp
Vanilla Essence - 1 tbsp

Method :

Roast the Rava and once it is cooled, add milk to this and allow it to rest for around 10 minutes.  In the meanwhile, beat the butter and sugar till it becomes smooth.  Now add the curd and mix well. It's now time to add the Rava mixed with milk which has been resting for 10 minutes to the curd mixture.  Add maida, salt, baking powder, baking soda, salt, vanilla essence and mix it gently.  Add the Tooti Frooti and mix well.  Keep some aside so that you can garnish it on top of the batter.  Now grease the cake tin and dust some flour and pour the mixture into it.  Tap it well so that the bubbles will settle down.  Garnish with left over Tooti Frooti.

Bake the cake in a preheated oven for 35 minutes at 180 degree.  Once this is done, take a silver foil and cover the cake tin and again bake it for 5 to 10 minutes at 160 degree.

Remove the cake from the oven and allow it to cool completely.  De mould the cake and slice it into pieces.... Serve this with your evening tea or for kids Short break Tiffin.
