Corn Masala Curry

Whenever I go to the city market, I always ensure that I get loads of corn.. Corn in different forms be it the charcoal roasted corn on the cob  with a mixture of salt, chilli powder and lemon juice sprinkled over it (Butta) which is Ria's favourite...Everyone at home also enjoys the Corn Coriander Soup, the corn chaat and the corn cutlets.... the list seems long :)

Sweet Corn in available in the market these days... so do get a couple of them and treat your family to different dishes.   Recently, when I was running out of vegetables, I made Corn Masala Curry and it turned out great with the combination of capsicum.

Let's take a look at the ingredients and method of making this delicious curry which will definitely remind  you of eating at a restaurant!

Ingredients :

Boiled / Steamed Corn with little salt : 1 cup
Bell Pepper / Capsicum - Yellow / Red / Green - 1
Kasuri Methi - 1/2 tbsp
Butter - 1/2 tbsp
Turmeric powder - 1/2 tsp
Water as required
Salt to taste

Masala (for grinding) :

Onion - 1
Coriander leaves - 1/4th cup
Green chillies - 2
Cumin Seeds - 1 tsp
Ginger - 1 piece
Methi (Fenugreek Seeds) - 1/4 tsp

For grinding separately :

Tomatoes - 2 Large
Cashew nuts - 5 to 6


Method :

Grind and keep aside both the masala's.  Boil or steam the corn with little salt.  In a pan add butter and the Onion Coriander masala and saute well.  Now add the Capsicum and saute for sometime.  It's now time to add tomato, cashew paste and saute well till the butter separates. Cook on low flame to ensure that the masala does not burn. Now put the turmeric powder and required water, salt and cook for some time.  Now add the boiled corn and cook well.  Put the crushed Kasuri Methi and serve with Hot Chapati / Phulka or Paratha's.
