Tadkewali Coconut Toast




This post is for all the children including my daughter Ria, who likes to eat Sandwiches... I made this for Ria's short recess Tiffin and her feedback when I reached home in the evening was Amma... awesome!!

This is very simple to make... Tadkewali Coconut Toast.... Ria does not like mustard seed Tadka, so did not put the Tadka for her.  You can decorate it with Tomato Sauce or Chutney and it looks very attractive :).

So Mommies... yet another new recipe for you which you can make for your children for their school tiffin!

Ingredients :

Bread Slices 10 to 12 (cut into round shape with a cutter)
Butter / Ghee
Mustard Seeds - 1 tbsp
Tomato Sauce - 3 tbsp

For the filling

Green Chillies - 3 to 4
Fresh coconut grated - 1/2 cup
Grated ginger - 2 tsp
Thick curd / yoghurt - 1/4th cup
Salt and Sugar to taste
Coriander leaves (1 tbsp) - optional

Method:

Grind the coconut, ginger, green chillies in a mixer without adding water. Now add sugar, salt and thick curd, chopped coriander leaves to the ground coconut.  Take the cut slices of bread and apply this mixture to one side and put another plain slice of bread.  On the non stick pan, add ghee / butter, and put little mustard seed.  When it splutters, put the sandwich and toast it till golden brown colour from both sides.


You may decorate this with Tomato sauce or Green chutney and serve this to your children or pack them for their tiffin.
