Sheer Khurma



After long days of fasting in Ramadan, Muslims celebrate Eid ul Fitr...Sheer korma is a traditional preparation made on the festival of Eid. Every household prepares this delicious dish in their own traditional way... I found cutting the dry fruits a little time consuming  while preparing to make the dish but it was worth all the effort! 

Every year, my colleague, Dolly Peerzada would bring Sheer Korma prepared by her Mom and would call all of us to relish this dish...We all are looking forward to Monday for her to join office and have the Sheer Kurma.

I made this dish for the first time.  I went and brought all the dry fruits and ingredients from the nearby shop that was required to make this dish.  I wanted Pistacho's and the shopkeeper was calling someone to check the rate of Pista.  Since I wanted a handfull and he was not sure of the rate, he did not charge me for it :).  I told his wife that I will be sending the Sheer Khorma once I make it.

My son also carried it for the hotel staff at JW Marriot where he is undergoing training... am waiting for him to come back and give me the feedback!  The Sheer Kurma was packed for few friends and neighbours also who relished it!!

Ingredients :

Milk - 500 ml (full fat)
1 tbsp ghee
1 to 1.5 tbsp sugar (you can adjust this to your taste)
1/2 cup broken thin Vermicelli or Seviyan
8 Cashews chopped
10 unsalted Pistachios sliced
8 Almonds sliced
10 to 12 seedless dates (Khajoor) chopped
4 Cardamoms crushed to a powder
1 tbsp charoli or chironji
1 tbsp Raisins (golden coloured)
1 tbsp - dry coconut (Kopra) grated
1 tsp Rose Water



Method:

Add little ghee and roast the Seviyan till golden brown and keep it aside.  In the same pan, add remaining ghee and add the chopped dry fruits and saute for 3 to 4 minutes stirring often.

Heat the milk and let it come to a boil.  Low the flame and simmer for another 8 to 10 minutes.  By now the milk will slightly thicken.  Add the roasted Seviyan and sugar to the milk and cook this for 8 to 10 minutes till the Seviyan becomes soft.  The milk will also thicken and reduce in volume.  Add the dry fruit mixture and cardamom powder.  Switch off the fire and stir well.  You make check on the sweetness and add more sugar if required.
Serve this hot, warm or chilled!  Garnish with Saffron Strands and Rose petals or dry fruits and enjoy the divine taste!
