Shrewsbury Biscuits

Baking is an addiction....My son keeps baking cakes and different types of biscuits at home.  I prefer making the eggless version...At a stretch of 3 days, I made 3 different types of biscuits... Coconut Crunch cookies, chocolate cookies and the famous Shrewsbury biscuits :). It is just amazing to eat freshly baked biscuits. 

I am sure you have heard about Kayani Bakery at Pune where you get the crunchy, crispy Shrewsbury biscuits.  Every visitor to the city, definitely takes home some of the biscuits, nankhatai or cakes from this famous place. The Shrewsbury biscuits and cakes and Mawa Cakes are special items at Kayani.

Let me share with you the simple eggless version of the recipe... Do bake them and share your experience!


Ingredients :

Maida (White flour) - 175 gm
Amul Butter - 125 gm
Powdered sugar 90 gm
Salt - a pinch
Milk Powder - 1 tbsp
Baking powder - 1 pinch
Vanilla essence 1/4th tsp

Method :

Sieve the maida, milk powder, salt and baking powder together.  In a bowl whip together the butter, sugar and vanilla essence till it is light and fluffy.

Add the maida mixture to it and gently mix to make a soft dough.  Divide the dough into 18 to 20 equal portions.  Flatten them and shape them like round biscuits or cut them with a cookie cutter.  Place them on a baking tray.

Preheat the oven at 180 deg C for 10 minutes and bake the biscuits at 150 deg C till light golden brown.  It takes around 20 to 25 minutes.  Remove the tray from the oven and allow it to cool.  Enjoy them!  You can store them in air tight container.
