Amritsari Paneer Kulcha
My colleague,
Rahul Pohekar had introduced us to a new Restaurant, i.e. Country Side Shack @
Bhugaon, Bavdhan... https://countrysideshack.com/. We had gone for team lunch to this place a few months ago..
We had such amazing food here.. we still remember the taste :). The Chef & owner Mr. Sandeep Pusdekar himself cooks for you if you require any
customisation. He will be around to take care of everything. It was a royal

It was the
first time that we had such soft and tasty Naan which was accompanied by a
spicy chicken dish... Yummy!!!. I made Amritsari
Paneer Kulcha for my family for dinner recently and this reminded me of the
soft Naan that we had at this Restaurant.
Let me share
with you the recipe of Kulcha which is simple & tasty!
Ingredients :
Maida - 2 cups
Bread slices - 4 (cut the sides)
Baking Powder -1/4th tsp
Curd - 2 tbsp
Salt & Sugar - 1 tsp each
Oil - 1 tbsp
Coriander leaves - 2 tbsp
Water as required
Stuffing for
the Kulcha :
Crumbled Paneer - 1/2 cup
Green Chillies - finely chopped -
2 tsp
Finely cut coriander leaves - 1
tbsp
Red Chilli Powder - 1/4th tsp
Cumin (Jeera) & Dry Mango
(Amchur Powder) - 1/4th tsp each
Salt to taste
Method
:
Cut the side portion of the bread and dip it in water and
remove and squeeze the water. Add this
bread to the Maida. Add salt, sugar,
baking powder and curd. By adding enough
water, make a soft dough. Add oil and
cut coriander leaves and again knead the dough well. Cover it with a lid and leave it aside for
around 1 hour.
For the stuffing, mix all the ingredients to the crumbled
Paneer and make around 10 to 12 balls.
Divide the dough into 10 to 12 balls. Flatten
and place the filling ball in the centre. Enclose on all sides and make a ball.
Dust with flour and roll out to a flat and thick disc. Heat few drops of oil on
the hot tawa. Cook on both sides on low flame, until the kulchas turn brown
Add loads of butter and serve this by garnishing chaat
masala. The Kulchas were served
with Pineapple Raita.
