Mango Kalakand easy recipe



All the sweet marts were closed during this lockdown and I know how people have been craving for sweets / desserts during this period…

Recently on Easter I had to bake a cake for a family and I made Gulab Jamun Rabdi cake for them.  I made the cake, Jamuns and Rabdi at home.  The customer was extremely happy with the taste of this cake and was in praise for me when she called to give me feedback and said that “We had desserts after almost a month and we were craving to eat desserts and  the cake got over in minutes”!!  It definitely made my day J.

I guess Chitale Bandhu has reopened since Saturday and is functional as per the guidelines from PMC… definitely happy news for all dessert lovers! 

We at my home are still following the guidelines of Stay @ Home, Stay Safe and hence only going out for essential requirements…. You must be wondering how did I manage the dessert cravings of my family… Since we got Alphonso mangoes at home, I have been making various dishes from mangoes… these days most of us want to make quick dishes so here I am back with another version of a fusion dessert - Mango Kalakand which is very easy to make and tastes divine!

So… without wasting much time, let’s get started…



Ingredients:

Fresh Alphonso Mango Puree – 1 cup
Paneer (Cottage Cheese) crumbled – 200 gms
Milk infused with Saffron – 1 tbsp
Milk powder – 2 tbsp
Sugar – 4 to 5 tbsp ( you can adjust this as per your taste)
Almond shavings – 4 to 5
Ghee for greasing the plate

Method :

In a nonstick pan transfer the mango puree and cook this for about 5 minutes on medium flame till you find bubbles appearing.. time to add in the paneer and milk powder and mix well… Keep stirring and cook this mixture for around 10 minutes.  Add in the milk infused with saffron and cook this further for another 5 minutes.  Time to add in the sugar and further cook for 5 to 7 minutes till all the water in the mixture evaporates  and the mixture will turn grainy and bind together.  Switch off the flame and transfer the mixture into a greased plate or tray and spread the mix in it. Press with a spatula and cut into desired shape with the help of a knife.  Garnish with almond shavings and once it is cooled refrigerate this for 2 to 3 hours and enjoy this delicious dessert. 

By making desserts at home, you can ensure to adjust the sweetness of your dessert and also be free from adultered mawa that may be used in the market while making Mithai.
