Bhindi / Okra Masala - For Diabetics

I am writing this post based on requests from two of my readers who wanted me to post sabzi recipes for diabetics.  I have not used a drop of oil while making this dish and the taste of this Sabzi is amazing!  It is recommended that we should eat at least 25% more of vegetables of the total consumption of food... I guess we all do the reverse :).  It is advisable that Diabetics consume not more than 2 tsp of oil in a day.  Sesame, Groundnut, Mustard Oil is what is recommended for the patients.  Coconut Oil and Extra Virgin Olive oil can also be used in  uncooked form.    Raw is King... Try and eat more of salads, sprouts daily...



Okra / Bhindi, this vegetable can help you control blood sugar, manage weight and keep complications of diabetes at bay...


Let's take a quick look at the Bhindi Masala.. This recipe is shared from Freedom from Diabetes Recipe Book!

Ingredients :

Bhindi / Okra - washed, wiped and cubed - 1/2 Kg
2 Onions - sliced thinly
2 Tomatoes - sliced lengthwise
Red Chilli Powder - 1 tsp
Dry Mango Powder (Amchur) - 1/2 tsp
Cumin / Coriander powder - 2 tsp
Garam Masala - 2 tsp
Turmeric Powder 1/4 tsp
Salt to taste
Coriander - for garnishing

Method :

Mix all the dry masala and add it to the cut Bhindi / Okra and steam.  The colour should remain green.  The amchur powder prevents the bhindi from becoming sticky.   Take a non stick pan and saute the onions on high flame.  When it browns, add the tomatoes and cook for some time.  Now add the Bhindi and mix well.  Garnish with coriander and serve.  

If you love to eat the Crispy version of the vegetable, you can bake the bhindi after steaming  in the oven for 5 minutes.  Serve with Chapati.
