Cool Cucumber Buttermilk Soup
I have been lazy and not blogged
for quite some time... I made a Cucumber Soup last week and wanted to eagerly
share the recipe with all of you!!
The days are very hot in summer... you must be wondering how can one
have soup in summer??...
It was that lazy Saturday afternoon...wanted to quickly cook something
for lunch... and finally made this Cool
Cucumber Buttermilk Soup and Spinach Mango Salad.... We were having a healthy
meal for a change :).
Everyone enjoyed this simple and quick meal... This soup does not
require cooking... it has a creamy texture and tangy flavour.. Enjoy the soup
with a dash of pepper & salt and diced cucumbers designed especially for
the Summer's! This two-ingredient soup
makes it a simple & refreshing dish!!

Ingredients:
2 cucumbers, peeled, halved, and seeded (I
used the green variety of Cucumber)
Thin cucumber rounds, for serving
2 cups buttermilk
Coarse salt and ground pepper
Extra-virgin olive oil, for serving.
Pudina leaves
Method:
Roughly chop 1 1/2 cucumbers; dice remaining cucumber half. Place
roughly chopped cucumber in a blender with buttermilk and blend until smooth
for 2 minutes. Season with salt and pepper. Divide soup among four bowls and
stir in diced cucumber. To serve, top with cucumber rounds, a drizzle of oil,
and more pepper if desired. Garnish with a Pudina leaf and enjoy this Cool Soup
in this Hot Summer!
