One Pot Veg Pasta Meal
Have you ever experienced days when you get bored of eating
dal, roti, sabzi and wished someone called you over for lunch or dinner..Well I
was dreaming about it for a while...
I had to make lunch for just me and my daughter that day...
so wanted to make something which was quick, simple and yes of course
tasty. We were bored of eating the usual
stuff...
I planned to make a one pot Veg Pasta meal which was
simpler... what I had to do was chop the veggies and throw in all of the
ingredients into one pot with pasta and the spices.
In this style of cooking, I have not precooked the pasta and
you also have less mess in the kitchen to clear up. Try them out for your next
potluck party or on a lazy afternoon or evening. I guarantee no one will guess
that the ingredients were all cooked together in the same pot :)
We both had a hearty meal and binged on some yummy Kalakand after lunch that I made in the morning!
So without wasting much time, jot down this menu and yes do

Ingredients :
Chifferi Pasta (you can use
any variety) - 1 cup
Chopped Mixed Vegetables -
Fresh peas, capsicum, French beans, carrots, jalapeno pepper - 1 cup
Sugar & Salt to taste
Olive Oil - 1 tbsp
Chopped Onion - 1 large
Sliced Garlic - 4 to 5
Water as required
Oregano - 1 tsp
Pepper powder - 1 tsp
Milk - 1/4th cup
Tomato Sauce - 1/3rd cup
Chilli Flakes
Cheese
Coriander leaves for
garnishing
Method:
Heat a pan and put olive oil. Add
the onions and garlic till they change colour.
Add all the veggies with little salt and sugar and saute well. Now it's
time to add pasta, water pepper, oregano & tomato sauce and cook for some
time on high heat till the pasta cooks well. Add the milk and cook till there
is very little water left in the pasta.
Throw in some chilli flakes and coriander leaves and mix well. Serve this
hot & creamy Pasta with grated cheese & enjoy!!
