Baked Vegetable Bread Roll - Great way to get your children eat their veggies!
It was one of those lazy evenings where I did not want to
cook the complete meal for dinner and so ended up making Pumpkin Soup, some
salad and baked vegetable bread rolls.
My family too enjoyed this changed menu :)
This is a healthy recipe as we have not deep fried the rolls in
oil but instead baked the Vegetable Bread Rolls.
You can make this perfect appetizer and enjoy them during the cold
winter evenings or as tea time snack during the monsoons.
It's very simple, super delicious and a must try recipe!
Ingredients :
Brown or White bread slices - 10 to 15
Boiled, peeled and mashed potatoes - 3 medium
Chopped Onion - 1 medium
Finely Chopped Chillies - 2
Mixed Vegetables - Peas, Sweet Corn, Carrots (I steamed them
in cooker) till soft
Coriander leaves
Lemon Juice
Masala :
1/2 tsp Red chilli powder
1/2 tsp Garam masala
powder
1/2 tsp Coriander powder
1/4 tsp Chat masala
Salt to taste
Method :
In a container add the mashed potatoes, steamed vegetables,
chopped onion, coriander leaves, lemon juice, salt and all the masala and mix
well with the help of your hand.
Now cut the edges of the bread (which can be used as bread
crumbs). With the help of a rolling pin
gently flatten the all the bread slices.
Take small portion of the mixture and place in the middle of the flattened
bread slice. Now roll the bread slices
from both tightly and with the help of water seal the edges. Place all the bread rolls in a baking tray
and brush them with butter or oil.
Preheat the oven and bake the rolls at 190 deg for 7 to 8 minutes. Flip them to the other side and bake for
another 7 to 8 minutes. You will notice
that they are crisp and changed the colour.
