Pavta Usal - Lima Beans Usal
My neighbour Geeta Kaku got me a big bowl full
of Pavta - Lima Beans and told me that she had got loads of it from the market
and I could make Usal out of it.
I have always seen this vegetable in the market
especially during the winter season but did not ever buy the vegetable or cook
it at home. I have made Peas Usal and Matki Usal (all Maharashtrian Sabji's) so
thought I can try the same method to make this Usal too.
It was quick and easy and also very delicious
and goes well with chapati, bread or rice.

Ingredients :
1 cup Lima Bean (Pavta) Remove the cover and wash
1 Onion - chopped
finely
1 Big Potato
cleaned and chopped into medium pieces
1 tsp Chili powder
1 tsp Turmeric
1 tsp Turmeric
1 tsp Coriander
Powder
1 tsp Garam Masala
1 tsp Maharashtrian Goda Masala
2 tbsp Oil
6-8 Curry Leaves
1/4 tsp Mustard Seeds, Asafetodia - 1/4th tsp, Cumin seeds - 1/4th tsp

2 tbsp Oil

A small piece of
jaggery
Coriander leaves

Heat oil in a pan and add mustard seeds, cumin seeds, asafetodia and curry leaves, when they start to splutter, add the onion and saute till the colour changes . Now low the flame and add Chili, Turmeric, Coriander, garam masala and Goda Masala and stir the masala into the oil and allow it to cook for a minute
Add Lima Beans, potatoes and Salt. Stir well so that all the beans are coated with spices. Add 1/2 cup water,jaggery piece and stir and cover with a lid. Stir occasionaly till beans are cooked.
Garnish with Coriander leaves and Serve with a hot chapati.
Note : I made this is in the cooker. After 1 whistle, low the flame and cook for 10 minutes and garnish with corainder leaves and serve hot
