Kothimbir Wadi - Crispy fritter
Due to the 10th and 12th Std
exams, the school starts at around 7:45 am these days and hence my daughter Ria
leaves home around 7:00 am. I decided to
make Kothimbir Wadi for her short recess tiffin recently which is a very simple
and quick recipe. It does not take much
time to make this dish.
This is dedicated all those
mother's who take all the efforts to ensure that their child / children eats
healthy food :). I do receive requests
to post quick recipes from my readers for kids tiffin.
Kothimbir Wadi is a crispy
fritter made from coriander leaves and chickpea flour. This is a Maharashtrian snack. It is also a perfect tea time snack
especially during the monsoon. I can
enjoy eating it any time of the day and night :).
The kothimbir Wadi is first steamed and then fried until
crispy and served with tomato chutney or a tempering of mustard seeds and
grated coconut.
The version I have prepared is also excellent for diabetic
patients.... You may quickly note down the recipe and do make this healthy version for
your family and friends!
Ingredients :
Finely chopped Corriander leaves - 1 cup
Besan (Chickpea Flour) - 1 cup
Garlic-Chilli- Ginger Paste - 1 tbsp (you may adjust this as
per your taste)
Salt to taste
Pinch of baking soda
Water as required
Method :
Add Garlic-Chilli-
Ginger Paste, coriander leaves,
salt and soda and the Besan. Make a paste by adding water. The consistency should be such that it can be easily poured into the steamer of container.
Now pour this
mixture into the steamers plate and steam for 15 minutes. Allow to cool and cut the steamed mixture
into small squares.
Pour 1 tsp oil and temper mustard, jeera (cumin) til, curry leaves, and Asafetodia. Add the cut Wadi to this tadka and allow it
to cook on low flame and 5 to 8 minutes
till the colour changes.
You may add Grated fresh Coconut and serve it hot!
