Semiya / Vermicilli Idli
I have taken some time out today to post another quick
breakfast recipe which you must definitely try!
This Idli can be made instantly and does not require the
batter to rest. It is made by adding Eno
or Fruit Salt like you make the Dhokla.
These Idli's turn out fantastic.
I did not add any Veggies to the batter but you may add par boiled
veggies and corriander leaves to the batter to make it more wholesome before
you pour them into the moulds.
I felt very nice when hubby dear said wow! another version of
tasty and innovative Idli's :). He said,
since you have been making so many variety of dishes at home there is no need
for us to go to a hotel to eat and enjoy dishes! This definitely lifted up my spirits.
This dish also works out as a healthy
breakfast for Diabetes!
You may add tempering
to the Idli's which adds to the aroma.

Semiya Idli's with spicy coconut chutney...

Ingredients :
Crushed
thin Vermicilli or Semiya - 1/2 cup
Ghee
- 2 tbsp
Rava
or Semolina - 1/2 cup
Finely
chopped green chillies - 1 tbsp
Small
pieces of Cashew nuts - 2 tbsp
Curry
leaves - 5 to 6
Corriander
leaves - 1 tbsp
Curd
/ Yoghurt - 1 cup
Fresh
coconut - 2 tbsp
Salt
- 1 tsp
Eating
soda 1/4th tsp
Eno
fruit salt - 1 tsp
Water
- as required
Method :
Take 1 tbsp Ghee
and heat the same in a kadai. Low the
flame and add the crushed Vermicilli and roast them till light golden brown
colour and allow it to cool.
Now add the remaining 1 tbsp ghee and roast the Rava / Semolina till it changes it's colour. Now add the Cashew nuts, green chillies and curry leaves to this mixture and saute for a minute. Allow this to cool. Now add the roasted vermicilli to this mixture. Add curd, corriander leaves, fresh grated coconut, salt and required water and make a thick batter and set aside for 10 minutes. Just before making the Idli's add the Eno salt and eating soda and mix the batter.
Brush the Idli
patra with little oil and pour the batter into each mould and steam the Idli's
for around 10 to 12 minutes... Serve the Idli's steaming hot with Spicy green
chutney / Sambar of your choice.
