Khajur Badam Roll - Sugar free

I recently visited Chitale Bandhu Mithaiwale to pick up some Bhakarwadi’s for office.  This place is very crowded at all times.    

I am sure many of you have tasted different sweets from this sweet shop.     Khajur roll, also known as Dates & Nuts rolls sold at this shop and at any other sweet shop is not only delicious but ridiculously expensive.

This is a sugar free recipe, so even diabetics can enjoy this but remember moderation is the key. This Khajur rolls are excellent snack/finger food for growing kids, a healthy food that all young and old will for sure enjoy J

I had got a packet of dark Khajoor (dates)… no one was eating it when served during breakfast and hence I thought of making Khajoor Badam Roll and was very confident that it would get over in minutes.

I just took 15 to 20 minutes to make these rolls. When my colleague, Machindra Talekar tasted this sweet, he said “Prema iska taste same Chitale walon ka jaisa hai” (This sweet tastes like the same we get at Chitale) J.   I felt really good after receiving this compliment!

Ingredients :
·         
     Deseeded and finely cut Khajur (dates) - 1 cup
·      Ghee - 2 tsp
·      Roughly chopped Badam  (Almonds) - 2 tbsp
·      Desiccated coconut - 1/4th cup

Method:

Deseed and finely cut Khajur (dates).  Add 2 tsp of ghee in a non stick pan and add the Dates and cook on low flame.  Add the chopped badam and allow to cook till the mixture is cooked well.  Make rolls of this mixture and roll them in the desiccated coconut. Wrap all the rolls in aluminum foil and deep freeze for 2 to 3 hours.  Remove and cut them into medium round pieces and serve.
