Healthy Soya Cutlets

We were counting the days in November & December 2015... Our son, Dhiraj was to come to Pune during his winter vacation..

I was on my way to office in the morning, when I got a call from him on the day he boarded the train... he sounded very scared... I got worried and was not sure about the reason and was panicked.  From the other end, I could here him say.. Amma, the TC is asking me to get down at the next station as I do not have an identity proof... it was the first time he was travelling alone and it was our fault to not remind him to carry the proof :(. 

He forgot his identity card in his room.  I could here him plead with the TC saying, please talk to my mom and she will also send you my Adhar Card online.   The TC was not ready to here him out... We managed to send the scan copy of the card to a fellow passenger and he finally showed the same to the TC... The gentleman was so arrogant that he refused to look at the proof and got the squads to take Dhiraj off the train.  They told him to pay fine or else get off the train.  He had to shell out Rs. 900/- plus to the TC to continue with the journey...  It was a big lesson he learnt during his first train trip :).

He was bored of the hostel food and wanted to eat variety of food :) . The next day in the evening, I made Soya Cutlets, tomato soup and  Summer Mint drink which he enjoyed. 

Loaded with huge quantities of protein, these cutlets make an interesting snack.  Make them when you host a party or your potluck gathering...
High on nutritional quotient, these zesty and delicious cutlets will definitely make you the star of the evening like me :)

Ingredients :

Soya chunks - 1 cup
Boiled and mashed potatoes - 1 cup
Medium sized onion - 1
Garam Masala - 1/2 tsp
Red Chilli Powder - 1/2 tsp
Coriander leaves - 2 tbsp
Salt to taste
Oil
Powdered Oats - 2 tbsp
Bread Crumbs - 4 tbsp

Method :

Pressure cook Soya chunks for  1 whistle with little water.  Wash it thoroughly to remove the raw smell.  Squeeze out the excess water.  Mash the Soya chunks well.  Now put this in a bowl and mix all the ingredients.  Saute this over a low flame for 3 minutes.  Make small round patties.


Prepare the coating by mixing the oats and bread crumbs.  Dip the patties in the mixture and coat both sides in the oats & bread crumbs mixture.  Heat the non stick pan.  Put little oil and shallow fry the cutlets until golden brown.  Serve with Green chutney & Tomato Sauce.
