Cucumber Salad with Peanuts and Coconut - Excellent for Diabetics!
Cucumber salad is a great dish to
serve especially on those hot days when we don’t want to be anywhere near the
stove or cooktop! Healthy salads’ can sometimes be boring, and you might end up
wishing for a richer dressing! but this one is sure to be a refreshing change
:)
This healthy vegetable makes a healthy treat that also helps
regulate blood sugar levels.
A perfect food to satisfy small hunger pangs, it keeps you
away from binge-eating. In this salad, I
have used Jaggery instead of sugar which gives it a great taste!
During the summer, we peel of the skin and enjoy this
vegetable with a dash of spice and salt...
I make this salad often at home
as it is very simple and quick to make.. This is excellent for Diabetics too!
Here is the recipe of Cucumber Salad
with Peanuts and Coconut which serves 8-10.
Ingredients :
Washed and
unpeeled Cucumbers chopped into tiny cubes - 4
Roasted and
crushed peanuts - 1/2 cup
Juice of 1
lime
Grated fresh
coconut - 1/4 cup
Salt to taste
(black salt / table salt)
Finely chopped
green chillies - 1 or 2
Dash of
Jaggery
Fresh coriander
chopped for garnishing
Method:
Mix all the ingredients
together. Adjust the jaggery, salt and
lime juice to taste. Garnish with coriander
leaves and serve.
