Hara Bhara Kebabs - Full of Greens!!

I took a 10 days break from office to spend time with the
kids as they had Christmas Vacation.... One of the weekends our friend Usha visited
us at Pune... she ensures she spends a day or two with us every year she visits
India. One day before Christmas, we
visited her in Mumbai... this was to attend her parents birthday
celebrations... I had the privilege to host the birthday event :). We had a great time together!!
Last week I made Hara Bhara Kebabs, a very healthy green kebab or cutlet with the goodness of spinach and green peas! This is a great finger food for toddlers and kids, these crispy cutlets are very delicious, filling and healthy. I ensured that my fussy kids ate their dose of spinach and peas this way...
True to its name hara bhara kebab
is in bright green color due to the addition of fresh green peas and blanched
spinach... so why visit a restaurant to enjoy this dish when you can easily
make it at home :)
Ingredients
:
1. 1 bunch palak
leaves / spinach leaves
2. 1 capsicum,
finely chopped
3. ¾ cup beans,
chopped
4. ¾ cup peas,
fresh
5. 2 tsp oil
6. 1 to 2 green
chili finely chopped
7. 2 potato,
boiled and grated
8. ¾ cup paneer
crumbled
9. 3 tbsp
coriander leaves, finely chopped
10. 1 tbsp corn
flour
11. 2 tbsp
breadcrumbs
12. ½ tsp kashmiri
chili powder
13. ½ tsp coriander
powder
14. 1 tsp amchur powder
15. ½ tsp garam
masala powder
16. ¼ tsp turmeric
17. salt to taste
18. 1 cup
breadcrumbs, to coat
19. Oil for deep
frying (I prefered shallow frying them)
Method :
In a kadai heat oil and add green
chili. Add capsicum and saute till the moisture disappears. It's time to add
beans and peas. Saute well. Transfer to
the blender and allow to cool completely. Blend to coarse paste along with
blanched palak. Transfer the blended paste into a large mixing bowl. (You need to ensure that this mixture does not
get watery or it is difficult to make the tikkis. Add grated potato, paneer and coriander
leaves. Add corn flour and breadcrumbs. Add in the spices and salt. Mix this
well... check the salt. Grease hands with oil and make a small patties. Cover
the patties with bread crumbs.
If you like this dish deep fried,
you can deep fry the prepared patties into hot oil. Fry on medium heat stirring occasionally. Drain the fried hara bhara kabab onto the
kitchen towel. Serve the hot hara bhara kabab
with sauce and Garma Garam Chai!
I prefered shallow frying the
kebabs. For this, you need to take a tawa
and drizzle some oil and keep the prepared tikkis and allow it to cook on one
side and then flip on the other side till the tikkis are cooked well. Serve them hot with a hot cup of tea!
