Peppery Peanut - (Vrath / Fast Food)

Whether you eat them in the form of chikki, in chivdas/farsaans, in chocolates, or just plain roasted from the roadside channa vendor, peanuts are good for you.  The kernels are enriched with many noteworthy health-benefiting nutrients essential for optimum health and wellness.


I made Peppery Peanut recently as a snack for evening tea... This was a big hit among the family members... It did not take much time to make as you will readily have most of the ingredients in your kitchen.. 

This dish can be prepared and served in case you are fasting... Try it out and do leave your feedback!

Ingredients :

Peanuts / Groundnuts - 1 cup soaked in water for 2 to 3 hours
Cumin seeds - 1 tsp
Ground green chillies - 2 tsp
Ghee - 1 tbsp
Fresh grated coconut - 1/4th cup
Coriander leave - 2 tbsp
Salt, Sugar and lemon juice as per taste

Method:

Soak the Peanut / Groundnut for 2 to 3 hours in water.  Wash them and pressure cook them with some salt and water upto 1 whistle.  Cool the cooker, and remove the cooked nuts and remove the excess water.  In a pan, add ghee and when hot add the cumin seeds, the ground green chillies and saute for a minute or two.  Now add the cooked peanuts, salt, sugar, lemon juice and grated coconut and mix well.  Garnish with Corinader leaves and serve hot!
