Crispy Rice Wada with leftover Rice

2020 has been a year of unfortunate events for many… the recent news about the Film actor Sushant Singh Rajput was shocking… May his soul RIP.


I believe it’s important to have someone in your life that you can share your feelings… just talking out your heart to someone will make you feel light… Each one has their own pressures and to deal with this do things that you love to i.e.music, arts, baking etc.  Live your life to the fullest… enjoy every moment and be cheerful!!

I have been experimenting with making wadas not urad dal wadas but wadas with rice…. During my first attempt I was not happy with the results… I did not give up and tried another method of making it and the result was crispy rice wadas….I am excited to share this recipe with you as it requires simple ingredients that would be available in your kitchen…. So let’s start cooking “Leftover Crispy Rice Wadas”

Ingredients

Cooked rice – 1 cup                                                                                                       Rice flour – 1/4th cup                                                                                                        Semolina (Rava) – 1/4th cup                                                                                        Yoghurt (Curd) – 1/4th cup                                                                                                Ginger – 1 inch finely chopped                                                                                       Green Chillies – 2 finely chopped                                                                                    Curry leaves – 15 to 20 roughly cut                                                                           Coriander leaves – a handful finely cut                                                                       Crushed pepper – ½ tsp                                                                                                Finely cut coconut pieces – 1 tbsp (optional)                                                                    Salt to taste                                                                                                                Baking Soda – 1/4th tsp                                                                                                    Oil for deep frying

                                                                          

Method :

Take leftover cooked rice and transfer to a mixer jar and add in yoghurt and make a coarse paste.  Transfer this to a bowl and add in the rice flour, Semolina and mix well.  Add in rest of the ingredients from ginger to baking soda and mix well to form a dough.  Please do not add any water in this mixture.  Allow this to rest for around 5 to 10 minutes.

Heat oil in a Kadai. Rub your palms with some water and scoop out small  balls of the prepared dough.  Press the dough gently into the shape of wada with a hole in the middle.   Fry these wada’s in hot oil on medium flame till they turn golden brown and crispy.   I served them with Sambar and Rasam….
