Creamy Shakarkand / Sweet Potato Kheer
This year very few people came out of their
houses to play Holi the festival of colours due to the Corona fear…. In our
society, we saved water and also did not face the after effects of holi i.e.
the society walls and other areas getting coloured😄
The night before Holi, our society security
helped getting the bonfire ready to be burnt with cow dung cakes, dried sticks
etc. This is also known as Holika Dahan..
this signifies the triumph of good over evil… We distributed Jilebi as Prasad
after burning the pyre and applied dash of colours on each others cheeks.
Dinner was special at my home… I made Paneer
Butter Masala, Curd Rice, Shakarkand / Sweet Potato kheer early in the evening and when I was
back home after the Pooja, I quickly
fried the Poori’s which was served piping hot to my family members…. I enjoyed
watching them relish the food… I wanted to post the recipe of Shakarkand (Sweet
Potato) Kheer during Holi but was tied up with baking and other household work…
Well better late than never… so here I am posting this special recipe for all
of you.
By the way, the Kheer tasted super delicious
the next day when it was cool as compared to the hot kheer we had for dinner.
Ingredients:
Full Cream Milk – ½ Ltr
Cooked Sweet Potatoes – 2
Dry Fruits – Cashew, Pista, Black Raisins
Cardamom Powder – ¼ tsp
Sugar – ½ cup (adjust as per your taste)
A pinch of salt
Method:
First of all cook the sweet potatoes and cool
them completely and mash them. Cut the
dry fruits and keep aside. Boil the milk
and reduce it to half. Add in the mashed
sweet potato and boil this well ensure there are no big chunks of the potato in
the milk. Now time to add the sugar and
cardamom powder and boil well. Add in a
pinch of salt and dry fruits and give it a boil and your creamy Shakarkand
Kheer / Sweet Potato Kheer is ready to serve. Garnish with dry fruits and serve it hot or cold. I recommend you serve it cold as it tastes delicious!!
