Gajar Kheer / Carrot Pudding - Happy New Year!!

We all make
resolutions for the New Year and by the time it’s February, we tend to follow
our same old habits and routine J…. From the last one year, I have learnt that if
you stick to your resolution or not it is important to have mental peace which
ensures everything goes right for you…
Give time
to yourself, speak good about yourself, love yourself, treat yourself with
something that you crave to eat… go for long walks, meditation works wonders,
do things that you like gardening, cooking, singing… think positive, speak
positive and remove all the negativity from your life! I am sure we all know this but now we need
to start following this to ensure a peaceful and stress free life!!
When we
talk about stress how can we avoid it??
Get good amount of sleep, Pranayam and Meditation, talk to your
neighbour, visit a friend and yes take some time to relax… and if you are not
able to follow any of them… don’t get STRESSED as I am sharing with you a
DESSERT recipe which will take away the stress from you…
Let’s make
an easy and delicious Carrot Pudding / Gajar Kheer to mark the New Year and add
sweetness to our lives!!!
Ingredients:
Washed and peeled
Carrots – 1 Large
Full Cream Milk –
½ litre
Sugar – 1 medium
bowl (adjust sugar as per your taste)
Cardamom powder –
½ tsp
Dry Fruits –
Pistachio, Almonds, Cashews, Raisins (sliced) – keep aside some for garnishing.
Strand of Saffron
Ghee – 1 teaspoon
Method:
Wash and peel the
carrots and slice them into cubes.
Pressure cook them on high flame upto 2 whistles. Cool this completely. Make a puree of the cooked carrots and keep
them aside.
Heat the milk in
a pan or container, once the milk starts boiling, low the flame and add the
carrot puree and cook this for 10 to 15 minutes on medium flame. Keep stirring continuously. You may now add
sugar and cook this for another 5 minutes.
It’s time to add the cardamom powder sliced dry fruits to the milk
mixture. Allow this to cook for another
10 minutes on low flame. Don’t forget to stir in between. By now, you will
observe that the mixture has thickened and is creamy. You may now check the sweetness and add more
sugar if required. Add in some saffron
at this time. In a small pan, heat the
ghee and add the balance dry fruits and when the colour of the dry fruit changes
switch off the flame and transfer it into the Kheer. You may enjoy this hot or cold. I prefer cooling it down… and refrigerating
it for 2 to 3 hours and then enjoying
this super flavorful, aromatic and super delicious Gajar Kheer with my loved
one’s!
