Masala Cheese Cookies

Masala Cookies are biscuits that you find in bakeries in Kerala.. You will find different coloured cookies sweet, salty and spicy and they look so tempting!  Whenever guests visited our home in Kerala, we looked forward to the Mixed cookies that they would bring along with them.  Our Grandmother used to give us all biscuits with our tea.  I especially liked the one with pepper flavour!

I tried making the  Masala Cheese cookies 2 years ago and they all got burnt and hard... as I was not aware of the settings and had to throw away all of them :(.  I dared to make them again recently but his time with lots of patience and the result was very good...It had a lovely flavour of all the masala and the cheese.

It was a Friday and since I had around 2 hours of time in hand after making the breakfast and Ria's Tiffin, I decided to bake these Cookies.  I gave all my colleagues and friends at office  to taste and they all loved the taste.

So let's check out the ingredients that you will require to make these delicious cookies!

Ingredients :

Maida : 150 gms
Milk Powder - 1 tbsp
Baking powder - 1/4 tsp
Chopped Coriander leaves - 1/2 cup
Green Chillies - 3 to 4
Salt - 1 tsp
Powdered sugar - 1 tbsp
Butter - 100 gm
Grated Cheese - 1/2 cup

Method :

Seive the maida, milk powder and baking powder together.  Coarsely grind together green chillies, coriander along with little salt.  Whip together the butter and sugar till light and fluffy and then add the prepared paste it to it and mix well.  Add grated cheese to this and add the maida mixture and mix gently to make a soft dough.

Roll it into 1/4th " thick roti.  Cut it into desired shape using a cookie cutter and place them on a baking tray.

Bake it in a preheated oven at 140 deg for 20 to 25 minutes till light brown.  Allow it to cool down completely and serve with a hot cup of tea or coffee.  You may store them in air tight containers for later use...
