Cucumber Rice Flour Pancake
I and my husband enjoy eating
fish.. We got to know about Fish Curry and Rice Joint situated in the Pune city
through our friends... we were also alerted by friends that it is a small outlet and there will be a big queue before we get to
the table. Anything for Fish :)... Since
children are not very fond of fish, we dropped children to my parents place and
myself and hubby headed towards the city for a lunch date :). We were so close to the joint but missed the
lane and finally after getting directions from several people, we reached our
destination. We waited for almost 30
minutes... but it paid off...
We ordered for a Fish Thali and had amazing fish
curry and fried fish.. We both opted to have Thandalachi Bhakri (Rice Pancake)
instead of Chapati. Finally we had
Solkadi which is famous drink especially
served in Konkan!
I was making Cucumber Rice
Flour Pancake the other day and it tastes somewhat like the Rice Pancake served
at Fish Curry and Rice joint.
These instant pancakes require no advance
preparations. Just whip them up in time for a quick breakfast. It is light healthy and an innovative way to
eat Cucumber. Make them for breakfast or
tea time.
These Pancakes taste delightful with green
chutney / red chutney, and since they are so easy to prepare you need not
restrict the option to breakfast – you can prepare it anytime you see a hungry
face entering home from work or play!

Ingredients
:
Grated Cucumber - 1/2 cup
Rice flour - 3/4th cup
Curd - 2 tbsp
Fresh grated coconut - 2 tbsp
Finely chopped green chillies - 2 tsp
Finely cut Coriander leaves - 2 tbsp
Red Chilli powder - 1/2 tsp
Salt to taste
Ghee / Oil for preparing the pancake
Water as required
Method :
Mix all the ingredients in a bowl and add enough water and make
a smooth batter.
Heat a non-stick pan and grease it lightly using little oil /
ghee. Pour 3 to 4 tbsp of this batter on
the pan and
using the back of your ladle, gently spread the batter with
a circular motion from the center towards the sides of the pan like Uttappa. Sprinkle some oil and cook on low flame till
one side is light golden brown. Now flip
this to the other side and cook well. Repeat with the remaining
batter to make more Pancakes . Serve immediately with green chutney.
