Haldiram Style Crunchy Masala Peanuits



When we got our monthly grocery, I picked up a packet of Haldirams Masala Peanuts from the stores.  On reaching home, freshened up and quickly made some masala chai and served the Masala Peanuts along with Chai… the Peanuts just got over in minutes and I was looking into the packet to check if there 
was more…they are very addictive and tempting too!

I decided to make them at home the next day and got all the ingredients required to make them.  I tasted them after making them and they tasted awesome and much tastier and fresh  without any preservatives than the store brought packed Peanuts!!

I stored them in airtight container and when I gave my husband to taste he just could not believe that it was home made.  I got lot of appreciation from him and this is what motivates me to keep trying new dishes..

Ingredients:

Long shaped skinned groundnuts / Peanuts – 2 cups

Besan / Gram Flour – ½ cup

Corn Flour – 2 tbsp

Rice Flour – 2 tbsp + 1 tsp

Ginger Garlic Paste – ½ tsp

Salt to taste

Asafetodia / Hing – ¼ tsp

Turmeric Powder – ¼ tsp

Kashmiri Red Chilli Powder 1 tbsp

Baking Soda – a pinch

Oil – 3 tsp

Water – 4 tbsp

1 tbsp Chat Masala

Oil for deep frying

Chat Masala and Chilli powder mix   (½ tbsp + ½ tbsp)

 

Method : 

Take a large mixing bowl and add in the besan, rice flour, corn flour, ginger garlic paste, salt, hing, turmeric and chilli powder, baking soda and mix this well.  Add in the skinned peanuts and 3 tsp of oil and mix well.  Slowly add water and mix everything well so that the batter gets well coated on the peanuts.  You can add 1 tsp more of rice flour this will help the peanuts to separate from each other.  Cover and set aside for a while.

 

In the meanwhile, heat a Kadai and add oil.  Allow the oil to heat well.  Deep fry the peanuts on low to medium heat.  Stir occasionally to ensure the peanuts are cooked evenly.  Transfer the fried peanuts onto a plate and sprinkle the chat masala and chilli powder mix.   Once it is cooled down, you can store them in air tight containers and enjoy the crunchy masala peanuts!  They stay good for a month.
