Aloo Wale Gulab Jamun

Chaturthi is one of the most eagerly awaited festivals during the
year that marks the birth of Ganesha, the elephant-headed god. Lord Ganesha is the
deity of wisdom and prosperity. This festival is celebrated with great fanfare,
joy, and good food all over India.
During this 10 day
festival, Lord Ganapati is offered with different sweets and Pooja and aarti is
performed.
Today I am sharing a recipe
of Gulab Jamuns made with Potatoes (Aloo
Wale Gulab Jamun). They turn out so
yummy, they will just melt in your mouth.
Most of the ingredients required to make this dessert will be readily
available in your kitchen pantry!

Ingredients:
For making Sugar Syrup
- 1 Cup Sugar
- 1.5 cups water
- 1 tsp Cardamom Powder or 2 Cardamom crushed
- 1 tbsp Rose water
Take a deep bottom vessel and add the sugar, water
and cardamom and allow this to boil on low flame till the sugar dissolves and
the water starts boiling. Switch off the
gas and add the rose water and mix well.
Cover and keep this aside and let’s make the Jamuns.
For making Jamuns
- 2 Medium sized Potatoes (Boiled and grated)
- 3 tbsp Maida (All-purpose flour)
- 3 tbsp Milk powder
- 1 pinch baking soda
- 1 tsp Ghee (clarified butter)
- Pista and almonds for garnishing
- Oil for deep frying
Method:
Wash the potatoes well and pressure cook the same upto 3 whistles. Once it is completely cooled, grate the potatoes (I had mashed them with a masher). If you grate them it is easy to bind them and there will be no lumps. Add in the Maida, milk powder, baking soda and mix this gently. It is important that you mix all the ingredients gently and gather the dough gently. Now add 1 tsp ghee and mix gently to form a smooth dough. Grease your hands with ghee and make medium or small size balls of your choice and keep them on a plate. The balls should not have cracks when you roll them.
Heat a Kadai and once it is hot, add enough oil and when the oil is hot, turn the flame on medium and add a tiny piece to check the temperature of the oil. If the dough comes up gradually and steadily, the oil is ready for frying. If it stays at the bottom of the oil, you need to heat the oil well and if the ball comes up too quickly, then the oil is too hot for frying.
Gently place the balls in the oil and fry on low to medium temperature. Do not overcrowd the pan. Only when the Jamuns have become pale golden, then turn them. Keep on turning and rotating them often and gently for even frying. If you don't turn them regularly, then they will have uneven shades of golden color. It would take around 7 to 8 minutes for the Jamuns to cook well. Once they turn golden brown, remove them from the oil and transfer them into the hot sugar syrup. Cover and let this sit for around 30 minutes. Garnish with cut dry fruits and offer this Prasad to Lord Ganesha.
