Instant Green Chilli Pickle / Mirch Ka Achar
After a long time I decided to take
some time out and update you all with a quick Green Chilli Pickle recipe that
you would love to eat with your dal rice, Pulao, Paratha etc... It is an instant version and does not take
much of your time to prepare it.
My sister, Priya is a big fan of this
pickle and she used to have a spoon of it in her everyday meals :). She has demanded that I make this again and
keep it in stock.
So if you want that additional flavour
in your meals, try out this recipe and spice up your taste buds!!
Ingredients
:
10 green
chilli medium spiced
1 tsp jeera
/ cumin seeds
2 tsp mustard
seeds / rai
¼ tsp methi
/ fenugreek seeds
1 tsp saunf
/ fennel seeds
1 tsp turmeric
/ haldi
Salt to taste
Juice of 1 lemon
¼ cup oil /
mustard oil
A pinch of hing
/asafoetida
2 tbsp vinegar
Method :
Wash and dry the green chillies and cut them into pieces. Take a kadai and dry roast 1 tsp jeera, 2 tsp mustard seeds, ¼ tsp methi, 1 tsp saunf on low flame for a minute. Cool completely, and blend to slightly coarse powder. Now transfer to the masala powder into the cut Chillies.

Add 1 tsp turmeric, salt to taste and juice of 1 lemon to the chilli mixture. Mix well making sure everything is combined well. Heat ¼ cup oil... You may use mustard oil for more flavours. Once the oil is hot, add in pinch of hing. Allow this oil to cool completely and pour it over the chillies.
Mix this well so that all the ingredients are combined. Add in 2 tbsp vinegar. The vinegar acts as preservative and helps store the pickle for longer time.
Mix well and can be consumed after 2 hours or keep under sun for 2 days for more flavors. Store the pickle in sterilized glass bottle. You can enjoy them with your rice or roti.

Excellent! I do make this pickle regularly! But I don't add saunf seeds. This time I will surely use saunf seeds.
